For a family-friendly meal that everyone will enjoy (no utensils required!) tacos are the way to go. Thanks to the lettuce rolls and Coconut Aminos, this one is fresh, tasty and free from gluten, too. SERVES 4 *item not included in box For the chicken • 2 chicken breasts •*3 tbsp olive oil •*salt and black pepper • 2.5cm piece ginger, peeled and minced • 2 cloves garlic, minced • 4 tbsp Coconut Aminos •*1 tbsp honey For the filling • 4 gem lettuces, root removed and leaves separated • ½ red cabbage, shredded • 250g mixed cherry tomatoes, diced • 1 avocado, sliced • Sour cream, to serve • Coriander leaves, to serve • Lime wedges, to serve 1. Preheat the oven to 180°C and line a baking tray with baking paper. 2. Pat the chicken breasts dry with kitchen paper and drizzle with two tbsp olive oil. Season with salt and pepper. 3. Roast in the preheated oven for 20 minutes, until just cooked through. 4. Meanwhile, make the sauce. In a large bowl, whisk together the remaining olive oil, ginger, garlic, Coconut Aminos and honey. 5. Use two forks to shred the chicken meat into pieces. Transfer to a baking dish and pour over the sauce. Cook for a further five minutes. 6. Arrange the lettuce leaves on a platter and divide the red cabbage, cherry tomatoes and avocado between them. 7. Top with the shredded chicken and serve sour cream, coriander and lime at the table. Allergy information: dairy
