A combination of creamy, silky smooth avocado soup finished with omega-3 packed flaked mackerel makes for a healthy, wholesome dish that can be ready in under 20 minutes. Allergy info: dairy, fish Prep time: 10 minutes, plus cooling Cook time: 7 minutes Equipment needed: blender or food processor Store cupboard ingredients required: olive oil, salt, black pepper • 3 tbsp olive oil • 1 brown onion, sliced • 1 clove garlic, sliced • 4 avocados, flesh only • juice of 2 lemons • 3 tbsp olive oil • 250g ricotta • 1 tsp salt • 2 Maple Smoked Mackerel Fillets • 2 tbsp coriander leaves 1. Place a pan over a medium heat and add 1 tbsp olive oil. Gently sauté the onions for 5-6 minutes without browning. Add the garlic and continue to cook for a further minute. Remove from the heat and allow to cool. 2. Add the cooled onions and garlic to a blender along with the avocado flesh, lemon juice, ricotta and salt. Blitz until completely smooth. 3. Divide among 4 bowls and flake over the mackerel. Garnish with the coriander leaves and freshly cracked black pepper to serve.
