Box includes 1 fresh Chicken Spatchcock Lemon & Herb flavor, sweet potato, red onion, yellow capsicums, zucchini, garlic and cherry tomatoes and parsley. A guaranteed crowd-pleaser, this healthy family favorite calls for almost no effort – once you’ve chopped the veg, the oven does the rest of the work. Heat oven to 200°C. Peel 300g potato and chop into 1-inch cubes. Quarter the onion, slice the capsicums, halve the zucchini lengthways and thinly slice into half moons, and halve the garlic bulb. Put in a roasting tray with the tomatoes; toss with 2 tbsp oil and 1 tbsp honey. Sit the chicken on top and brush with 1 tbsp oil. Roast for 35 mins until chicken juices run clear; slice into 4 pieces. Crush the tomatoes with the back of a spoon then serve the veg with the chicken.
