Box includes quinoa, red onion, beetroot, carrots, capsicum, thyme, halloumi and rocket. These robust flavors keep well, so make great leftovers for the next day at work – be sure to roast the veggies until they’re sweet and caramelized. Heat oven to 200°C. Rinse 140g quinoa and cook to pack instructions. Cut the onion into eighths, peel and quarter the beetroot, slice the capsicum and cut the carrot into batons. Put on a baking tray with 5 sprigs thyme, 2 tbsp oil and 1 tbsp honey. Coat and roast for 30 mins. Slice halloumi into ½cm-thick pieces and brush with 1 tbsp oil. Fry over medium heat until golden on both sides. Stir roasted veg and 2 handfuls rocket into the quinoa. Top with the halloumi and drizzle with honey to serve. Allergy advice: contains dairy
