Once you’ve cooked halloumi this way, you’ll never go back. The hot, honey-drizzled cheese tastes fantastic paired with the crunchy, zingy salad. Allergy information: dairy SERVES 4 *Item not included in box Prep time: 10 minutes Cook time: 7 minutes Store cupboard ingredients required: olive oil • 2 x 250g blocks halloumi • 2 tbsp olive oil • 2 tbsp honey • 8 thyme sprigs • 250g cherry tomatoes on the vine • *2 tbsp zaatar • 6 tbsp olive oil • 1 cucumber, sliced into rounds • 1 avocado, halved and thinly sliced • 4 mixed peppers, seeds removed and thinly sliced 1. Preheat the grill to high. Make diagonal slits through the halloumi, 1cm apart, without slicing all the way down. Turn and repeat to achieve a crisscross pattern. 2. Put the cheese on a baking tray, drizzle with olive oil and honey and arrange the thyme sprigs inside the cuts. Place the vine cherry tomatoes on the baking tray. 3. Grill for 5-7 minutes until the halloumi is golden brown, keeping an eye on it to ensure it doesn’t brown too quickly, and the tomatoes are blistered. 4. Meanwhile, mix the zatar with the olive oil and arrange the cucumber, avocado and mixed peppers on a large platter. 5. Top with the halloumi and vine tomatoes. Drizzle over the zatar dressing.
