Paleo-inspired melon salad Bursting with crunch, colour and plenty of flavour this recipe takes just 10 minutes to prepare and doesn’t require any cooking at all. Prep time: 10 minutes Cook time: No cook Store cupboard ingredients required: olive oil, honey • ½ rock melon • 2 small cucumbers • 1 red onion, peeled and thinly sliced • 1 tbsp pumpkin seeds • 1 tbsp sunflower seeds For the dressing • 2 tbsp olive oil • juice of 1 lime • 1 tsp paprika • 1 tsp honey 1. For the dressing, whisk all of the ingredients together in a small bowl. Season and set aside. 2. Scoop the seeds from the melon and slice into four pieces. Remove the skin and slice the flesh very thinly. Peel the cucumber into thin ribbons with a vegetable peeler. 3. Gently mix the melon, cucumber and onion. Drizzle over the dressing, sprinkle with the pumpkin and sunflower seeds and serve.
