Say hello to a seriously hearty, seriously easy frittata that makes taro the star of the show and has fabulous depth of flavour thanks to the smoked cheddar. Allergy information: contains eggs and dairy • 250g taro, peeled and cut into 2.5cm cubes • 1 red onion, peeled and cut into eighths • 125g radishes • 3 tbsp olive oil • 1 bunch spring onions, finely chopped • 100g green beans, cut into thirds • 200g smoked cheddar, grated • 10 eggs • mixed salad leaves, to serve 1. Preheat the oven to 180°C, gas mark 4. Line a baking tray with baking paper. 2. Tip the taro, red onion and radishes onto the tray and drizzle with 2 tbsp olive oil. Season, mix well and roast for 30-35 minutes or until the taro is golden brown. 3. Set a large ovenproof frying pan with 1 tbsp olive oil over a medium heat. Fry the spring onions and green beans for 3-5 minutes until tender. 4. Preheat the grill to high. In a large jug, whisk the eggs with the smoked cheddar. Season well. 5. Stir the taro, red onion and radishes through the green beans. Pour in the egg and cheese mixture and cook for 8 minutes until lightly set. Grill for 5 minutes more until the top is golden brown. 6. Cool the frittata in the pan for 5 minutes then slice and serve with the mixed leaves.
