Produced in Sardinia and Lazio, it is a hard and cooked cheese, made with whole sheep's milk. It has a thin rind of light ivory or natural straw color, sometimes capped with black. The slightly peeled white paste is compact, crumbly and crunchy.

With a savory and slightly spicy taste in table cheese it becomes spicy and intense in grated cheese.

Keep refrigerated 2-6°C.
