Box contains: beef tomatoes, cucumber, garlic, red onion, lemon and basil This refreshing, revitalizing soup is soothing, easy on the stomach and positively brimming with antioxidant-rich tomatoes, hydrating cucumber and fragrant basil. • 4 large beef tomatoes • 1 small cucumber • 2 garlic cloves • 1 red onion • juice of 1 lemon • 100ml olive oil, plus extra to serve • 4 sprigs basil, leaves picked 1. Roughly chop the beef tomatoes and place in a blender. Peel and finely chop the cucumber, garlic and red onion, then add to the blender along with the lemon juice and olive oil. 2. Season and blitz until well combined. Strain the soup through a sieve and chill in the fridge for at least two hours. 3. To serve, divide the soup amongst bowls and garnish with the basil leaves and a drizzle of olive oil. Add a few ice cubes if you like.
